How to Make Chinese Dim Sum

Chinese dim sumDim sum is a Cantonese word and is associated with their old tradition tea tasting or they call it yum cha and this is treated as a weekend family day. Their belief that tea is inappropriate to combine with food began to change for they discovered that tea can aid to digestion that is why teahouses started to add various snacks. There began this Chinese Dim sum and this discovery end up so well for its name continues to rise for ages.

Ingredients for the filling of your favorite Chinese Dim Sum:

• 340 grams shrimp
• 40 grams bamboo shoots (minced)
• 1 pc green onion
• 2 ½ tbps cornstarch
• 1 egg (just add the egg white)
• 2 tsps sake
• 1/2 tsp sugar
• 1 tsp toasted sesame oil
• 1/2 tsp soy sauce
• 1/2 tsp salt
• 1/4 tsp fresh ginger (grated)
Ingredients for the dough:
• 150 grams wheat starch
• 30 grams wheat starch or tapioca flour
• 1 cup boiling chicken broth
• 1/4 tsp salt
• 1 tsp vegetable/ corn oil

The instructions on how to make Chinese Dim sum seem so difficult to follow but definitely it’s not. Try ir yourselves.

1. Wash the shrimp and remove shell. Cut into pieces, not too small or approximately ½ inch. Put the shrimp together with the filling ingredients and mix well. Set the mixture aside.

2. For the dough, let all the dry ingredients be mixed in a bowl. Combine the vegetable oil and the chicken broth and stir.

3. Put some wheat starch over a kneading surface. Start to knead the dough while it’s still hot until smooth. If you feel the dough is sticky, add some more wheat starch.

4. Cut dough into four slices and roll each slice. Using your palms, roll each slice into an 8-inch cylinder. Cut each tube into 8 pieces. Be sure to cover it with plastic so you could keep the dough wet as you flatten them

5. A secret in making the wrapper into an almost perfect circle is to put each piece of two pieces if parchment paper in between and make it fat with the use of the bottom of a pan.

6. You can use a rolling pin to let the dough roll out more.

7. Wrinkle 8 fine pleats, making sure each pleat joins previous pleat halfway and leave some edges without pleats.

8. Use a teaspoon to place filling into the wrapper, it should be at the center.

9. Forming a half circle, you have to press the edges together. Do the same procedures until you finish all 32.

10. Steam the dumplings. Let it be over high heat for about 7 minutes. Using a steamer, cook the dumplings over high heat for 7 minutes. Remove it from heat and wait or 3 minutes to settle and then you can have your delicious dumplings right on your own hands.

Whenever I go to malls, I always look for Chinese Dim sum. This is one of my favorites. The chili sauce makes me crave for more. The feeling of contentment in me within my stay at the mall wasn’t missed. I know it’s all worth it. Since it’s one of my favorites, I tried to cook and it went well and I’m sharing it with you now.
