Roasted Summer Vegetables with Egg Noodles

I just want to share this recipe that we cooked  last night.  Yesterday i was looking for a recipe in the internet and i stumbled upon the site guiltykitchen.com and saw this very delicious  Roasted Summer Vegetables with Egg Noodles recipe.  I decided to make it because the most of the recipe mentioned were already in my kitchen except for the pine nuts. I had to go to the nearest grocery store to buy the pine nuts.   If you are a vegetarian like my me i think you will love this recipe because it has lot of vagetables in it like brocolli, carrot, eggplant, squash and more.  What i love about this recipe is the egg and noodles in it.  Visit the http://guiltykitchen.com/?p=262 if you also want to learn how to cook this recipe but here is the preview of the recipe from the site.

1 cup broccoli florets
1 large carrot, oblique cut
1 small eggplant, cubed
1 small yellow summer squash, cubed
1 tomato, cut into small wedges
1 Tbsp. veg oil (divided)
1/4 cup of fresh basil, oregano and thyme, chopped
1/4 tsp. ground cumin
salt & pepper to taste
1 clove of garlic, minced
1/4 cup pine nuts, roasted
1/4 cup of feta cheese, crumbled
2 cups (dry measure) broad noodles
chiffonade of basil, to toss at end

We really liked the taste of Roasted Summer Vegetables.  In fact, we are planning to cook it again this weekend.
